MMMMMMM....Cookies, made with Ricotta Cheese?!?!?!


Indeed they are...and they are YUMMY.  Hee hee --

My friend Sue and her hubby had us over for dinner last weekend, and had some of these cookies that her Mom made for Christmas.  I kindly begged for the recipe, and couldn't wait to make them for my very own.  My hips, on the other hand, would have been happier not knowing how easy these are to make ;0).

Here's the recipe, for those who are interested:

Ricotta Cheese Cookies
 
1 Cup of softened butter
 
2 cups granulated sugar
 
15 ounces ricotta cheese
 
3 tsp. vanilla extract
 
1 tsp. salt
 
1 tsp. baking soda
 
4 cups flour
 
Preheat oven to 350.
 
Mix all ingredients well, until dough sticks together in a big ball.  It will be very sticky.  Drop by teaspoon full onto an ungreased cookie sheet.  Decorate with sprinkles if desired.  Bake 10 minutes or until the bottoms turn golden brown.  Let cool for one minute & then transfer to wire racks to cool completely.
